This course is designed to act as an introduction to the art of game cookery. Clients will prepare three recipes, including Pheasant, Rabbit and wild Venison. There will be a morning introduction which will include tips and shortcuts i.e. what to do with the brace of pheasants your husbandwife brings home! followed by the basic principles of easy butchering, marinating and timing and the preparation of one dish for lunch During the afternoon we will prepare the two further recipes, with clients working in pairs.
